Happy Father’s Day! The kitties got Jack a grill for Father’s Day this year. And it’s just in time to celebrate some of the great recipes in this brand new cookbook called AROUND THE FIRE. It’s written by the owners of Ox restaurant in Portland, Oregon. And it’s centered on Latin American and Argentinian cooking on the grill. Not just any grill either. These fires are hot. Perfect for the man in your life.
Although we usually think of grilling being with meat, meat, meat, you’ll find unique ways to grill the local fresh veggies that are in season right now. And not only veggies. there are appetizers, salads, and even desserts, all cooked on the grill.
This grilled asparagus is done with dungeness crab and capers. We’ll be breaking in our new grill today with grilled asparagus with shaved asiago cheese.
I especially like the grilled skirt steak. And we’re making it too! They’ve topped it with the famous chimichurri sauce from their restaurant, Ox.
This sauce makes about two cups:
- 1/2 cup minced yellow onion
- 1/2 cup chopped fresh flat-leaf parsley leaves
- 1 Tablespoon chopped fresh oregano
- 1teaspoon finely grated or minced garlic
- 1 1/2 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon red pepper flakes
- 1 cup red wine vinegar
Add the salt and vinegar last. Mix it all together. Store covered and it will last for a couple days. Really good stuff! Tasty.
